Vegan Lentil Spread

Hey friends,

Lunchtime for me mostly consists of sandwiches, bread and some kind of topping. Since processed meat and huge amount of cheese aren’t too healthy, I like to create healthy spreads to go on top.

To this Lentil spread I added curry spice, that I thought went well with the taste. But if you prefer it plain, you can just add olive oil and lemon juice with salt and pepper. The great thing about lentils is that they turn increadibly soft after cooking that you can easily mash them with a spoon or fork. no hand mixer or food processor needed!

The #healthycatchycravings project is still going strong, with a few planed “cheat meals”. Don’t go too hard on yourself when it comes to things like unhealthy cheat meals. What makes food like that unhealthy is the regular consumption. But a bite one in a while is totally fine!
