Hey friends,
Today I come to you with a surprise mid week post. It’s this bowl of goodness! I’ve been experimenting with different bowl and dressings, and I love how bowls allow you to eat so many different types of food! The more colorful the better, is what I always say! And I just love the fact that it is super easy to take with you to work or school or even to a nice picnic.
So on the this specific bowl, I made this into an Asian style bowl with a super delicious sesame dressing. Of course you can also roast the broccoli for even more flavor and an extra little crunch. Or you can swap out the chick peas for edamame beans and the quinoa for some rice for even more of an asian style. It’s more about the amazing dressing on top!
That’s what I love about bowls. You can totally make it your own! And it’s so easy, you only need two steps and 10min.
Serves 2 bowls
Ingredients
- 150 Quinoa
- 4 carrots
- 400g Broccoli
- 250g cooked chickpeas
for the dressing
- 2 tbsp sesame oil
- 3 tbsp olive oil
- 1/4 tsp minced ginger or ginger powder
- 1/2 tsp minced garlic or garlic powder
- 1 tbsp sesame
- 1 tbsp white vinegar
- salt
- pepper
Instructions
- Wash and cook the quinoa according to package instructions. When done drain and let cool slightly. In the mean time wash, peal and grate the carrots. And lastly blanch the broccoli so that they stay nice and crunchy. Arrange everything with the cooked chickpeas in a bowl and set aside.
- For the dressing, add all the ingredients into a jar and shake to combine. Drizzle the dressing on over the bowl and serve.
