Even though spring has disappeared again here in Germany, I have refused to accept this cold weather and cuddled up indoors with blankets and lots of tea. Additionally I decided to bring in some more summer feeling into my home with this walnut field salad with a delicious honey mustard dressing. I just think this might be my favorite salad! Just thinking of this salad, I can imagine myself sitting on the balcony, enjoying my mountain of salad while watching the sunset. What a perfect end to a day!
Simply by the colorful spectrum of this salad you know you are getting all the goodness you need. Vitamins in the tomatoes, leafy greens and cucumbers, protein in the beans, antioxidants and fiber in corn and lots of omega-3 in the walnuts. So what are you waiting for?

Ingredients
- 70g field salad
- 150g canned corn
- 100g canned kidney beans
- 200g cucumber
- 125g cherry tomatoes
- 60g walnuts
for the dressing
- 1/4 tsp salt
- 1 tsp pepper
- 1 tbs honey
- 1 tbs mustard
- 2 tbs olive oil
- 1 tbs balsamic vinegar
Instructions
- Cut the cherry tomatoes into quarter wedges and the cucumber into bite size pieces. Add tem to a bowl together with the drained corn, kidney beans and walnuts.
- Wash the field salad thoroughly and take off the roots before adding to the other ingredients.
- In a separate bowl mix the ingredients for the dressing together to form a smooth, runny paste.
- Drizzle the dressing over the salad ingredients and toss to mix. Add some extra walnuts for more crunch.
