Healthy Banana Peanut Pancakes

Dear Friends,

After a looong time, I’m finaly back! A lot has happened in my off time. I’ve traveled eastern Europe and moved home and started a new semester of uni. As a celebration to moving in with my loved one, I made some pancakes. But not just any pancakes, healthy, delicious and super fluffy pancakes! Also Great for children with lots of protein and healthy fats coming from the peanuts. Give them a try! you’ll love them!

Ingredients

  • 2 bananas
  • 2 eggs
  • 70g oat flour
  • 1 tbsp peanut butter
  • 1/2 tsp baking powder
  • pinch of salt
  • 3 tbsp dark chocolate chips

Instructions

  1. Mash the bananas in a large bowl. Beat in the eggs and peanut butter. Add the dry ingredients and mix just until combined. Add the chocolate chips.
  2. Heat a non-stick pan over medium heat and make 2 tbsp heaps of batter for one pancake. Fry until golden brown and flip. Do not press down on pancake when frying, it squeezes out all the air.
  3. Serve warm with some banana and syrup on top.
