Baked Sweet Potato Salad

Hey friends,

Long time no write. Many of you have probably realized I took some time off catchy cravings and founded my own company matcha monkey and moved house again. But along the way I really missed you guys and missed creating all those delicious recipes! So, I’m back guys! And here to share with you all the delicious recipes I’ve discovered in the mean time. Oh, and before I forget, since I’m 99% vegan now, the recipes will also 99% be vegan. But  don’t worry, they are still delicious! I promise! And if you must have some meat or cheese, just add as much as you want.

Now, to the delicious recipe I want to share with you guys. This truly is my favorite salad and I wish I could have it everyday! But sadly sweet potatoes aren’t too affordable here in Germany (At least for a student and when not on sale). But once in a while, we all like to treat ourselves.

Now you might ask, what is so special about this roasted sweet potato salad recipe, when there are thousands of them out there? It’s all about the sweet potato spices when roasting! its sweet, yet savory and at the same time somehow christmasy. There are now words to describe it!  You just have to try it, so let’s get on with the recipe!

Ingredients

roasted sweet potato

  • 2 large sweet potatoes
  • 5 tbsp Olive oil
  • 1 tbsp salt
  • 1 tsp cinnamon
  • pinch nutmeg
  • 1/2 tsp tumric

salad ingredients

  • 250g cherry tomatoes
  • 1 large cucumber
  • 1 red onion
  • 400g canned kidney beans
  • 100g salad greens

salad dressing

  • 5 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tsp garlic powder
  • 1 tsp dried parsley
  • salt
  • peper

How to

  1. Preheat the oven to 200°C.
  2. Peel and dice the sweet potato and place on a baking tray lined with parchment paper. Toss everything with the spices and make sure the sweet potato isn’t overlapping, but evenly dispersed. Bake for 40min or until done.
  3. In the mean time thinly slice the onion, dice cucumber and tomatoes, wash and prepare salad greens and drain and rinse the kidney beans. Place everything in a salad bowl.
  4. Prepare salad dressing: place all the ingredients into a tight container (like a mason jar) and shake everything together.
  5. Once sweet potatoes are done let cool for 10min. Toss salad with the dressing and garnish with sweet potatoes.
