Today I’ve got an easy one for you. This Mexican Stir Fry can be made in a single pan, is hassle free and at the same time, gives you so many colorful veggies and proteins. Serve it with some fresh rice or bread.

- 1 red belle pepper
- 1 onion
- 400g canned kidney beans
- 300g canned sweet corn
- 200g (frozen) green beans
- 1 tsp ground cumin
- 1/2 tsp paprika spice
- 1 tsp ground coriander
- 1 tbsp dried parsley
- salt and pepper
- Thinly slice the onion and bell pepper. Drain and rinse the kidney beans and sweet corn. Boil the green beans for a few minuets, until they are done.
- Slowly heat up a pan with some oil and add the onions. Once the onions are soft, add all the other ingredients one by one giving each ingredient 1-2min before adding the next.
- Season with all the seasoning. Serve hot with some freshly cooked rice.
