Pasta Salad

Hello Friends!

The days are getting warmer and longer. And we are definitely getting into the barbecue and picnics season. At my uni, now is the time students come together at the popular “Innwiese” (A meadow by the river Inn) and grill, sunbathe or enjoy some ice cream. And this is what I like to bring as a dish for everyone to enjoy! What I also like to do with this pasta salad is meal prep and bring it to uni for lunch.

So today I’m sharing a delicious, quick and easy pasta salad. It is perfect to bring along to work, school, barbeques or picnic. It will be a stunner and people will be lining up for the recipe! Ingredients

  • 150g feta cheese
  • 250g pasta
  • 125g olives
  • 250g cucumber
  • 250g cherry tomatoes
  • 1/2 red onion
  • 2 garlic cloves
  • 1 tsp dried parsley
  • 1 tsp pepper
  • 1/2 tsp salt
  • 4 tbsp olive oil
  • 2 tbsp balsamic vinegar

Instructions

  1. Cook the pasta according to package instructions and let it cool.
  2. Cut the cherry tomatoes and olives in half, chop the red onion and garlic finely and cut the cucumber and feta into bite size pieces.
  3. Combine all the ingredients into a bowl and add the seasonings. Mix well.
  4. Refrigerate the pasta salad overnight of for at least a few hours.
