Chicken Chorizo with White Beans

Hey Friends,

A month ago I picked up a magazine with the intent to inspire myself and try out new recipes. When I came across a delicious looking recipe with chicken and chorizo, I knew I had to make it! But right from the get go, I wanted to change the recipe in a few different ways, to make it even better!

The Chorizo Sauce turned out FANTASTIC! In my opinion, a work of art on its own, paired with some pasta, couscous or baguette. Also perfect for a special meal like christmas, thanksgiving or just to impress your significant other with this delicious meal! I’d love to hear what you think of this dish, so leave me a comment!

Ingredients

  • 4 pieces chicken thigh
  • 200g chorizo sausage
  • 1 onion
  • 400g white beans
  • 500g passata
  • 200g green olives
  • 250g cherry tomatoes
  • 1 tbsp white vinegar
  • 1 tsp sugar
  • 1 tsp salt
  • 1 tsp pepper
  • 1/2 tsp cayenne pepper
  • 1/2 tsp paprika spice
  • 1 tsp dried rosemary

Instructions

  1. Preheat the oven to 180°c fan.
  2. Prepare the chicken by washing, drying and seasoning with salt and pepper. Oil a large non-stick skillet and grill the chicken just until brown on each side. Transfer onto a baking tray and bake for 30min.
  3. In the meantime, slice the onion into thin wedges and braise until an oiled saucepan until glassy. Add the chorizo and sautee for a few minutes. Add the white beans and season with paprika and rosemary.
  4. Pour in the passata, add 250ml water and bring to a boil. Let it simmer for 5min.
  5. Add the cherry tomatoes and the olives and cook for another 10min. Taste with cayenne pepper, pepper, salt, sugar and vinegar.
  6. Serve hot with the chicken.
