A month ago I picked up a magazine with the intent to inspire myself and try out new recipes. When I came across a delicious looking recipe with chicken and chorizo, I knew I had to make it! But right from the get go, I wanted to change the recipe in a few different ways, to make it even better!
The Chorizo Sauce turned out FANTASTIC! In my opinion, a work of art on its own, paired with some pasta, couscous or baguette. Also perfect for a special meal like christmas, thanksgiving or just to impress your significant other with this delicious meal! I’d love to hear what you think of this dish, so leave me a comment!

Ingredients
- 4 pieces chicken thigh
- 200g chorizo sausage
- 1 onion
- 400g white beans
- 500g passata
- 200g green olives
- 250g cherry tomatoes
- 1 tbsp white vinegar
- 1 tsp sugar
- 1 tsp salt
- 1 tsp pepper
- 1/2 tsp cayenne pepper
- 1/2 tsp paprika spice
- 1 tsp dried rosemary
Instructions
- Preheat the oven to 180°c fan.
- Prepare the chicken by washing, drying and seasoning with salt and pepper. Oil a large non-stick skillet and grill the chicken just until brown on each side. Transfer onto a baking tray and bake for 30min.
- In the meantime, slice the onion into thin wedges and braise until an oiled saucepan until glassy. Add the chorizo and sautee for a few minutes. Add the white beans and season with paprika and rosemary.
- Pour in the passata, add 250ml water and bring to a boil. Let it simmer for 5min.
- Add the cherry tomatoes and the olives and cook for another 10min. Taste with cayenne pepper, pepper, salt, sugar and vinegar.
- Serve hot with the chicken.
