Zucchini Chicken with Sea Buckthorn

First of all, I want to apologize for being absent for some time. With the exam time coming up, I have been extremely busy with uni and to be honest, kind of stuck in a rut. I have those phases sometimes where motivation and creativity is low and and I have to remind myself to stay motivated and get my creative juices flowing again.

Today I’m sharing a recipe with you that popped into my head sitting at home on the sofa, staring at the wall. Also for the first time I’m cooking with Sea Buckthorn that I kindly received from my friends at Super Good Fruits. To my astonishment it complimented each other perfectly! The slight sourness gave it an interesting twist. A simple and delicious dinner!

Ingredients

  • 400g chicken breast
  • 1 zucchini
  • 2 garlic cloves
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 tbsp lemon juice
  • 1 tbsp Super Good Fruits dried Sea Buckthorn

Instructions

  1.  Cut the chicken into bite size pieces. slice the zucchini horizontally in half and in 1cm slices. Thinly slice the garlic.
  2. Heat up a frying pan and grease with oil.On medium heat, slightly brown the garlic to release the aroma, add the chicken and cook until well done on the outside and add the zucchini. Cover the pan and cook the zucchini, stirring every few minutes.
  3. Drizzle lemon juice over the top, season with salt and pepper and add the dried sea buckthorn.
  4. Serve with some steamed rice.

German Recipe:

Zutaten

  • 400g HĂ¼hnchenbrust
  • 1 Zucchini
  • 2 Knoblauchzehen
  • 1/2 tl Salz
  • 1/2 tl Pfeffer
  • 1 el Zitronensaft
  • 1 el Super Good Fruits gefriergetrocknete Sanddorn Beeren

Anweisung

  1.  Die HĂ¼hnchenbrust in WĂ¼rfel schnetzeln, die Zucchini längs halbieren und in 1cm breite Scheiben schneiden. Die Knoblauchzehen in dĂ¼nne Scheiben schneiden.
  2. Eine Pfanne erhitzen und einfetten. Auf mittlerer Stufe Knoblauch anschwitzen. HĂ¼hnchenbrust hinzugeben und von allen Seiten anbraten. Dann die Zucchini hinzugeben und mit geschloĂŸnem Deckel kochen lassen. Alle paar minuten rĂ¼hren.
  3. Mit Salz und Pfeffer abschmecken und Zitronensaft darĂ¼ber geben. Am Ende noch die Sanddorn unterrĂ¼hren.
  4. Mit gekochtem Reis servieren.
