Vegan Coconut Cubes

Hello friends,

This is a super easy finger-food recipe for party deserts! The taste and consistency reminds reminds me of sitting on sunset beaches in south-east Asia. With all that is going on at uni, I could really use a vacation. So I made myself this delicious desert to calm my nerves. If you totally feel me and are also currently buried under heaps of work, then make these and I promise you will feel better. Or if you just want something sweet and healthy. Actually, scratch that. Anyone who is reading this, MAKE THESE! You will thank me later.

Ingredients

  • 500ml coconut milk
  • 70g corn flour
  • 70g sugar
  • 100g coconut flakes

Instructions

  1.  Combine the coconut milk, corn flour and sugar in a pot. Bring to a boil while whisking constantly. When boiling and thick, pour it into a greased casserole dish or any other desired form.
  2. Set aside and let it cool until room temperature, then chill in the fridge overnight.
  3. Take it out of the form and cut it into cubes. To serve, coat the cubes generously in coconut flakes
